Spring Snack Mix

Happy Monday, everyone –  I hope your weekend was wonderful!

Today’s post features one of my all time favorite snack mixes. It’s so easy, so versatile, and soooo tasty!

I especially love the sweet and salty combination that comes from the almond bark, pretzels, and peanuts. Here’s how you can make it:

First, gather your ingredients:

Measure out 12 cups of Rice Chex, 4 cups of pretzels, and 1 1/2 cups dry-roasted peanuts. Mix this up well.

Melt 1/2 lb. almond bark in the microwave. Do so by cutting up the bark into chunks and melting it in 30 second increments to avoid burning.

Once it’s melted, it’ll look something like this:

Carefully pour this over the cereal mixture. I always like to put a lid on the container and then gently shake it to make sure it’s evenly coated.

Add in the M&M’s. I typically wait until this step to make sure the almond bark has had a chance to cool down to avoid melting the candy. Shake this up as well.

Spread the mixture out onto wax paper to let it finish cooling. Top with some colorful sprinkles if you wish. 🙂

I have to warn you that this mix is dangerously addicting. Once you start eating, you can’t go back. 🙂 So if you’re going to make a big batch, be sure to have someone to share it with!
