Chocolate Cherry Bars

I have to admit that I’m really not that big of a fan of cherry. I can easily pass up cherry pie or cherry cheesecake. I know, I know, I’m weird.

BUT, I do know how to redeem cherry pie by adding chocolate to it, so does that make it better? 🙂

These chocolate cherry bars are the beautiful combination of devil’s food cake and cherry pie filling. Simple, delicious, and unique, too!

Start the chocolate cherry bars by gathering your ingredients: devil’s food cake mix, 21 oz. can cherry pie filling, 2 eggs, and  1 tsp. almond extract.

Combine this well. A beater works best to make sure it’s mixed thoroughly! In this case, I used a stand mixer.

???????????????????????????????

Spread the batter evenly into a well-greased 9 x 13″ pan. You can also bake the bars in a jellyroll pan for a thinner bar; the baking directions will be a bit different and you can find this below.

???????????????????????????????

???????????????????????????????

Bake the bars in a 350 degree oven for 25-30 minutes. If you’re using a jellyroll pan, reduce the time to about 20-25 minutes. Use the toothpick test to determine when it’s done to best suit your needs.

Meanwhile, begin the frosting. You will be pouring this over the warm bars. Melt 5 tbsp. butter in a saucepan.

???????????????????????????????

Add 1 c. sugar, 1/3 c. milk, and 1 c. chocolate chips. I also added another splash of almond extract because nothing goes together quite like cherries and almond flavor, am I right? It will look a little funky, but stir constantly to help melt the chips. Bring the frosting to a boil for 1 full minute, stirring the whole time. Remove the frosting from the heat.

???????????????????????????????

Remove bars from the oven and carefully pour frosting over bars.

???????????????????????????????

It’s important to let these cool completely before cutting the bars. I let them cool overnight. What do you think? Looks pretty tasty, huh? 🙂

I’ve decided I need to invest in some colorful plates for photography reasons. No one ever tells you the things you’ll need to start a food blog:

  • Great-grandma’s recipes: Check
  • Fairly knowledgeable cooking background: Check
  • Ability to write wittingly: Oh, so close 🙂
  • Decent camera: Well, it works anyway…
  • Photography skills: Not quite
  • Photography props: Definitely not

Oh well, more room to grow, right? It keeps me humble anyway.
